Just a Little Somethin' Somethin'

I was in the mood for apples tonight.  Mostly because my husband brought home KFC for dinner and there never seems to be enough food for the money.

Soooo, my pregnant self still being hungry, I decided to experiment a bit, and guess what?  I pleasantly surprised myself!  Gotta love it when that happens. :)

This is what I made.  Sorry for the lousy photos, I did make this at night when the lighting isn't great for pics.



This is a variation of an apple crisp.  I took a quart of bottled apple pie preserve, and dumped it in an 8X8 glass baking dish. I then covered the apples with about 1/2 package of yellow cake mix, and dotted the whole thing with butter.  All of this got thrown into a 350 degree oven for about 25 minutes or until the whole thing started to bubble.

I let the whole thing cool and then spooned the warm "crisp" over vanilla ice cream.  Can you say heaven?

This hit the spot and filled that emptiness that dinner didn't quite take care of.

Oh, I'm sorry I don't have the recipe for the bottled apple pie filling (I'm sure you could use a canned apple pie filling or your own concoction).  If there is enough interest I can beg it off my brilliant mom to share.

Also, I might need to give a little credit to an old college roomate who gave me this idea, only I remember using cherries WAAAAY back then.  Seriously it was a very long time ago but I was sure glad that I was able to remember enough to come up with this ta-sty treat.

  3. Oh, bless your heart for posting this. I've made it with peaches before but never apples. Duh. Why didn't I think of that? I disappoint myself.
