I know fall has arrived when I start craving pumpkin bread. Of course, if I'm making it, it HAS to have chocolate chips!
I got this recipe years ago from a class mate in nursing school. She brought it as a treat for a study group and I've never felt the need to find another recipe. This one is un.be.liev.able!
I think it definitely rivals what Great Harvest sells (that is my humble opinion). Plus, I usually have everything on hand that I need to throw it together when my family is in the mood for a fallish treat.
Here's my recipe:
Mix the following together and set aside.
3 cups flour
1 tsp. baking soda
1 1/2 tsp salt
1 tsp. nutmeg
2-3 tsp. cinnamon
Mix together 4 eggs and 1 cup of oil in a large bowl.
Add a 15 oz. can of pumpkin mix and 2 cups of sugar to your oil and eggs.
Alternate adding your dry mix and 2/3 cups of water to your pumpkin mixture.
Now to take it over the top, add chocolate chips to taste (this means a whole bag for me!). You can even sprinkle more on top if you're a true chocoholic.

Bake at 350 degrees for 50-60 minutes, until a toothpick stuck in the center comes out clean. Butter the top if you want to.
The original recipe says this makes 3 loaves of bread but I usually just make 2 pretty large loaves and bake them a little longer if needed.
I don't know about you, but I start to slobber just looking at these pictures!

This sounds like it's a lot like some muffins that my daughter makes and they are sooooo yummy and always a big hit at our tailgates!!!
