Hip Spreadinlicious!

I ab-so-lutely LOVE these. As in, I can't stop with just one. Sometimes it ends up being 3 or 4 or just way to many. I am a glutton when these are around and don't worry about keeping track of how many I eat. It's just a lot - ok?


These are a little messy looking but you get the idea. They are a layered mint brownie. My original recipe calls them Cream de Mint Brownies but I call them Hip Spreadinlicious Brownies since I always tend to put on a couple of pounds shortly after I make these. SOOOO totally worth it though! I love that these have some green in them for St. Patrick's Day celebrations too.

Here's a recipe if ya'll want to try it out:

1 c. flour
1 c. margarine
1 c. sugar
4 eggs
1 1/2 c. Hershey's syrup (16 oz. can)

Beat until smooth.
Bake the brownie layer @ 350 degrees for 20-25 min. in a 13x9 pan. Cool.

Cream Layer


2 c. powdered sugar
1/2 - 3/4 tsp. peppermint extract
1/2 c. butter
green food coloring
1 Tbsp. water

Beat all of these ingredients until smooth and then spread on the cooled brownie base. Refrigerate.

Top Layer

1 c. chocolate chips
6 Tbsp. butter

I usually melt this in the microwave 15-30 seconds at a time until melted and then spread over the chilled cream layer. Keep chilled until serving.

If you want to speed things up a bit, you can use a boxed brownie mix. However, they aren't quite as pretty when cut up. This time around I was just making the brownies for my family so I did use the boxed mix. Not as pretty but every bit as AWE-SOME!



Can you tell I'm not much of a photographer? I really gotta work on that! It's #20 on my list of things to do. Pretty high priority, huh?

promise if you try these you'll become as crazy about them as I am. That's why I only make them once in awhile...otherwise my hips wouldn't fit through the door!

  6. I had a friend recently give me an entire pan of these. They were so very yummy, but I had to share the wealth. One friend said they were "the best dessert ever!"
